Kuch Nahi Or Nothing

Once, my brother-in-law visited us with his family for a week’s vacation. While we were going around a lot, every time I would ask the kids “what do you want to eat”, they would respond by saying “kuch nahi”. “Kuch Nahi” is a Hindi language  term, that means “nothing”. They were only having soda and junk food and would refuse to eat at home.

To outsmart these kids, I invented a new recipe and named it “Kuch Nahi”. Next time when they said “kuch nahi” I gave them this dish and they had to eat – “you guys asked for kuch nahi to eat”…

Ingredients

  1. Get all green vegetables that you can get in your fridge. Ensure, all of them can be eaten without cooking.
  2. I got hold of green bell pepper, red bell pepper, yellow bell pepper. Diced
  3. Added some diced onions
  4. Boiled potatoes, dices
  5. Diced tomatoes
  6. Olives (seedless), fined chopped
  7. A bit of jalapeno (pickled). Just a bit to give spicy taste, but not too much that kids will refuse to eat
  8. A bit of kidney beans (optional)
  9. Green peas
  10. Mayonnaise (or any other white sauce)

Preparation Method

Just dice all the vegetables, and mix with Mayonnaise sauce. Give the kids other possible options for sauce.

My kids liked it and they asked for more 🙂

 

 

Baked Palak Paneer Recipe

Baked Palak Paneer

Simple vegetarian dish made with paneer(cottage cheese) and palak(spinach).You can use your home oven to bake it.

Ingredients [ to serve 4 ]

  1. Spinach – 1/2 Kg.
  2. Paneer(Cottage Cheese) – 100 gms., cut into cubes
  3. Onion – 1 small, diced
  4. Tomato – 1 small,diced
  5. Butter – 3 tbsp.
  6. Bay Leaves – 2 or 3
  7. Cumin Seeds – 1 tbsp.
  8. Salt – To taste
  9. Black Pepper Powder – 1/4 tbsp.
  10. Ginger Garlic Paste – 1 tbsp.
  11. Green Chillis – 3 Or 4
  12. Garam Masala Powder – 1 tbsp.
  13. Corriander Powder – 1/4 tbsp.
  14. Cumin Powder – 1/4 tbsp.
  15. Red Chilli Powder – 1/4 tbsp.
  16. Vegetable Oil – As needed

Preparation Method

  1. Mix ginger/garlic paste, green chillis and spinach in water. Pressure cook it for 7-8 mins.
  2. Cut the paneer into small cubes. Keep two cubes for garnishing.
  3. Heat oil in a pan. Add bay leaves, cumin seeds and chopped onions. Fry on medium heat untill the onions are dark brown.
  4. Add all other spices mentioned in the ingredients list and stir well.
  5. Mix ginger/garlic paste, green chillis and spinach in water. Pressure cook it for 7-8 mins.
  6. Take a pan and fry the paneer cubes in butter untill they turn slightly brown.
  7. Mix ginger/garlic paste, green chillis and spinach in water. Pressure cook it for 7-8 mins.
  8. Add the cooked spinach to the fried paneer and mix well.
  9. Put the mixture into a baking try, add rest of the butter and bake for 30 mins. at 180 degrees.
  10. Grate the paneer kept for garnishing and spread it over the preparation.
  11. Add tomato and onions (if you want) to garnish, as shown in the image.
  12. You are ready to eat!

Capsicum Paneer

Perfect vegetarian dish when you are in a hurry. Or, when your husband brings guests without letting you know. Prepare this paneer dish in just 15-20 mins…(Capsicum is also called green bell-pepper)

Ingredients [ to serve 4 ]

  1. Paneer(Cottage Cheese) – 100 gms., cut into cubes
  2. Capsicum (Green Bell-Pepper) – 1 large size, cut into cubes
  3. Capsicum (Red Bell-Pepper) – 1 large size, cut into cubes
  4. Onion – 1 small, diced
  5. Tomato – 1 small,diced
  6. Salt – To tasteBlack Pepper Powder – 1/4 tbsp.
  7. Vegetable Oil – As needed

Preparation Method

  1. Put oil in a pan and add all the vegetables mentioned above.
  2. Fry all of them for 5-10 mins.
  3. Add salt and black pepper powder according to taste.
  4. Fry for another 5 mins.5.
  5. You are ready to eat!

Chana Masala

Simple but delicious preparation of chana (grams) with potatos… Again a vegeterian dish

Ingredients [ to serve 2 ]

  1. Kala Chana (Black Gram,Large Size) – 1/2 Kg.
  2. Onion – 1 chopped
  3. Tomato – 1 chopped
  4. Garlic/Ginger Paste – 1 tbsp.
  5. Cloves & Badi Ilaychi – 2-3 Nos.
  6. Bay Leaves – 2 Nos.
  7. Curry Paste(Or Dhania , Jeera Powder) – 2 tbsp.
  8. Corriander Leaves – Few
  9. Pepper Powder – 1/2 tbsp.
  10. Turmeric Powder – 1/2 tbsp.
  11. Salt – To taste
  12. Vegetable Oil – 5 tbsp

Preparation Method

  1. Soak chana overnight in water and cook it in pressure cooker
  2. In a pan heat oil.
  3. Add colves, ilaychi, bay leaves , onion and fry till they turn brown.
  4. Add salt, turmeric powder, tomato, ginger/garlic paste and the curry paster(you can add dhania, jeera powder if you do not have curry paste) and stir well.
  5. Now add chana and cover it.
  6. Let it cook for 10-12 mins. on medium flame.
  7. Garnish it with coriander leaves….you are ready to serve

Chole Masala

World’s simplest preparation of Kabuli (Or Chole) Chana with mouth watering taste. A vegetarian’s delight.

Ingredients [ to serve 4 ]

  1. Chana – 1 cup
  2. Onion – 1
  3. Tomato – 1
  4. Salt – To taste
  5. Dhania powder – 1/2 tbsp.
  6. Red chilli powder – 1 tbsp.
  7. Garam masala powder-1 tbsp.
  8. Garlic paste – 1 tbsp
  9. Ginger paste – 1 tbsp
  10. Turmeric powder – 1/2 tbsp
  11. Cumin seeds – 1/2 tbsp
  12. Curd – 2 tbsp

Preparation Method

  1. Soak chana in water overnight.
  2. Cut onion and tomato.Grind and make paste
  3. Heat oil in a pan add Cumin seeds,bay leaves and fry for few seconds and then add the above paste and ginger garlic paste fry til the oil starts to separate
  4. Now mix together red chilli powder,turmeric powder,dhania powder,garam masala powder,salt and curd and fry them in medium heat(or flame) for 5 minutes .
  5. Add water to make thick gravy.Bring the gravy to boil.Add chola and stir well.Cook over medium heat for 7-8 minutes
  6. Garnish it with chopped coriander leaves,green chillis and onion

 

Matar Paneer Recipe

Matar Paneer

A vegetarian’s delight, if you like Paneer (Cottage Cheese)…One of my favorites.

Ingredients [ to serve 4]

  1. Green peas(frozen) – 1 cup
  2. Onion – 1 chopped
  3. Tomato – 1 chopped
  4. Salt – To taste
  5. Dhania powder – 1/2 tbsp.
  6. Red chilli powder – 1 tbsp.
  7. Garam masala powder-1 tbsp.
  8. Garlic paste – 1 tbsp
  9. Ginger paste – 1 tbsp
  10. Turmeric powder – 1/2 tbsp
  11. Cumin powder – 1/2 tbsp
  12. Paneer- 200 gms
  13. Tomato ketchup – 2 tbsp

Preparation Method

  1. Heat oil in a pan and fry the paneer till it turns light brown and remove to drain on a plate.
  2. Add chopped onion,tomato,ginger-garlic paste and fry until golden brown
  3. Add dhania-jeera powder,red chilli powder,garam masala powder, turmeric powder,salt and tomato ketchup, and fry till the oil starts to separate
  4. Add paneer and peas.Stir for 5-6 minutes over low heat.
  5. Add water and simmer for 15 minutes
  6. Sprinkle with coriander leaves

Sambhar – The South Indian Dal

Our attempt to make the popular “Sambhar”…a very famous vegetarian recipe from southern India…my one time favorite.

Ingredients[ to serve 4 ]

  1. Toor dal- 1/2 cup cooked
  2. Onion – 1 chopped
  3. Tomato – 1 chopped
  4. Salt – To taste
  5. Sambhar powder – 1tbsp.
  6. Red chilli powder – 1 tbsp .
  7. Tamarind paste-2 tbsp.
  8. Garlic paste – 1 tbsp
  9. Ginger paste – 1 tbsp
  10. Turmeric powder – 1/2 tbsp
  11. Mustard seeds – 1/2 tbsp
  12. Curry leaves-3-4
  13. Whole red Chilli –

Preparation Method

  1. Heat oil in a pan.Add mustard seeds,red chilli and curry leaves and fry for 1 minute.
  2. Add onion,tomato,ginger-garlic paste,and fry till the oil starts to separate
  3. Now add red chilli powder,sambhar powder,turmeric powder,tamarind and cook for 3-4 mins.
  4. Add cooked dal and simmer gently for 10 minutes.
  5. Serve hot with rice

 

Stuffed Karela (Bitter Gourd) Recipe

Stuffed Karela (Bitter Gourd)

You would be surprised to know that Karela dish can also taste good!! I can bet on this.

Ingredients [to serve 4]

  1. Karela- 4 medium
  2. Onion – 1 (chopped)
  3. Tomato – 1 chopped
  4. Salt – To taste
  5. Dhania powder – 1 tbsp.
  6. Cumin powder – 1 tbsp .
  7. Kala jeera- 1/2 tbsp.
  8. Ajwain – 1/2 tbsp
  9. Ginger paste – 1 tbsp
  10. Garlic paste – 1/2 tbsp
  11. Amchur powder – 1 tbsp
  12.  Lemon juice – 2 tbsp

Preparation Method

  1. Slit the karelas lengthwise,only on one side from start to end
  2. Scrap out the white seeds with a spoon carefully and boil them with salt for 10-15 minutes
  3. Heat mustard oil in a pan and add kala jeera ,cumin seeds and ajwain and fry for few seconds
  4. Now add onion,tomato,ginger garlic paste,dhania, jeera powder,salt and turmeric.Fry them for 15 minutes.
  5. Add amchur powder when the oil starts to separate
  6. Now stuff the masala inside every karela and fry them untill all sides are properly cooked and the karela turns golden brown
  7. Sprinkle some lemon juice on the karela before serving

Masala Dosa

My effort at making the most popular south Indian dish “Masala Dosa”. I must admit, I’m is good at it… 🙂

Ingredients [ to serve 4 ]

  1. Urad Dal- 1 Cup
  2. Rice – 2 1/2 cup
  3. Salt to taste

Preparation Method

  1. Soak rice n dal together overnight
  2. Grind these ingredients together to a very smooth consistency.
  3. Add salt and water leave to rise for 8-9 hrs
  4. Check the batter n if needed add enough water to make into a smooth pouring consistency
  5. Heat tava very hot,splash little water over it and immediately pour some batter onto it, spreading it thin with a circular motion
  6. Lower the heat and add little oil around the edges .
  7. When edges start browning a bit it is almost done.
  8. Add desired filling and fold over
  9.  Serve hot with sambhar and coconut chutney

Dahi Baigan

For those who like and who don’t like baigan (eggplant or brinjal).A nice preparation of dahi (yogurt) and baigan(eggplant/brinjal). Especially a must for those who hate baigan.

Ingredients [ to serve 4 ]

  1. Baigan- 2
  2. Curry leaves – few
  3. Panch Phoran – 1/2 tbsp
  4. Salt – To taste
  5. Curd – 250 gms.
  6. Red chilli powder – 1 tbsp .
  7. Green chillies – 2 .
  8. Small pieces of ginger
  9. A pinch of turmeric

Preparation Method

  1. Cut baigan into 2 inch long pieces.
  2. Mix salt and turmeric in baigan
  3. Deep fry the baigan pieces n keep aside
  4. Mix yoghurt gently with sugar n salt n little water.
  5. Heat oil in a pan and add panch phoran,green chilles,gingerand curry leaves.
  6. Then add yoghurt after 2 minutes add baigan pieces n serve hot
