Rohu Fish Curry

The famous “Rohu fish” and the curry.

Ingredients [to serve 4]

  1. Rohu Fish – 1/2 kg
  2. Onion – 1
  3. Tomato – 1 chopped
  4. Salt – To taste
  5. Red chilli- 2.
  6. Red chilli powder – 1 tbsp .
  7. Cumin seeds-1 tbsp.
  8. Garlic – 3
  9. Panch phoran – 1/2 tbsp
  10. Bay leaves – 2
  11. Turmeric Powder – 1/2 tbsp.

Preparation Method

  1. Marinate fish with turmeric powder and salt for 15 minutes
  2. Make a paste of onion ,garlic,red chilli and cumin seeds
  3. Heat mustard oil in a pan and fry the fish till it turns golden brown
  4. Heat mustard oil again in another pan and add panch phoran and bay leaves.
  5. Now add the paste and cook till the oil separates.Add turmeric powder,salt and red chilli powder
  6. Add water and fish and cook in medium flame for 10 minutes

Chicken Curry

A very simple no-frills-attached chicken dish. Probably this is the most widely used chicken preparation method in India.

Ingredients [to serve 4]

  1. Chicken – 1 kg
  2. Onion-2 medium(chopped)
  3. Tomato – 1 chopped
  4. Salt – To taste
  5. Red chilli powder- 1tbsp.
  6. Curd – 1/2 cup .
  7. Green chillies – 2
  8. Ginger paste – 1 tbsp
  9. Garlic paste – 1 tbsp
  10. Chicken masala powder- 1 tbsp
  11. Garam masala powder – 1/4 tbsp
  12. Coriander leaves

Preparation Method

  1. Marinate chicken with turmeric powder ,salt ,red chilli powder and curd
  2. Heat oil in a pressure cooker, add onion and fry till the onion turns golden brown.
  3. Now add ginger-garlic paste,tomato,red chilli powder,chopped green chillies and fry till the oil separates.
  4. Add salt ,turmeric powder,chicken masala,garam masala and the chicken pieces and pressure cook it for 10 minutes
  5. Garnish it with coriander leaves and serve hot with rice or chapatis

Chilli Chiken

Though the picture did not come out very good, it does taste good. Not at all a hot preparation. The name is a misnomer. It’s in fact sweet!

Ingredients[to serve 4]

  1. Chicken- 1/2 kg (boneless,cut into small pieces)
  2. Onion-1 big(chopped)
  3. Tomato Sauce- 3 tbsp
  4. Salt – To taste
  5. Vinegar – 1 tbsp.
  6. Soya Sauce – 3 tbsp .
  7. Green Chillies- 4 chopped.
  8. Ginger paste- 1 tbsp
  9. Garlic paste – 1 tbsp
  10. Egg – 1
  11. Corn Starch – 1 tbsp
  12. Black Pepper Powder – 1/4 tbsp
  13. Red chilli powder-1 tbsp
  14. Coriander leaves

Preparation Method

  1. Marinate chicken with ginger-garlic paste,soya sauce(1 tbsp),egg ,corn starch and salt for 45 minutes
  2. Heat oil in a pan and fry the chicken pieces till it turns golden brown
  3. Keep the fried pieces in a separate container
  4. In the left over oil, fry chopped onion,green chillies and ginger-garlic paste slightly.
  5. Add vinegar,tomato sauce,soya sauce,black pepper powder.
  6. Stir continuously.Now add the chicken pieces .Cook for 5 minutes
  7. Garnish it with coriander leaves and some chopped green chillies

Instant Chili Pickle

Make a really hot green chili pickle in minutes…No need to wait for days…like our grandma’s…

Ingredients [to server 5]

  1. Green Chillies Р5 big
  2. Amchur Powder – 1 tbsp. (Dried mango powder, the sour ones)
  3. Garlic Cloves – 4 big
  4. Salt – To taste
  5. Mustard Oil – 2 tbsp.
  6. Lemon Juice – 2 tbsp.

Preparation Method

  1. Grate garlic cloves and add amchur powder, salt and 1/2 tbsp. mustard oil.Mix well.
  2. Slit the green chillis vertically, and remove all seeds from inside. Do not break them into two pieces.
  3. Take the spices prepared in step 1 and fill a little in each chilli.
  4. Take rest of the mustard oil and put it in a pan.
  5. Fry the chillis filled with the spices till the chillies turn brown.
  6. Sprinkle lemon juice to reduce the heat.
  7.  You are ready to serve .

You can keep them in the refrigerator for a few days. With each passing day, the heat will reduce.

Alu Bhujia a.k.a Indian Potato Fries

Quick fire desi french fries!!! (Indian version of French Fries)

Ingredients [to serve 2]

  1. Potato – 2 big
  2. Poppy Seeds(Posto) – 2 tbsp.
  3. Corn Starch – 1 big
  4. Salt – To taste
  5. Black Salt – 1/2 tbsp.
  6. Pepper Powder – 1/4 tbsp.

Preparation Method

  1. Cut the potatoes like french fries.
  2. Add poppy seeds, corn starch, salt and mix them well
  3. Deep fry until the potatoes turn little brownish
  4. Add black salt and pepper powder.
  5. You are ready to serve your Alu Bhujia

Vegetarian Cutlet

Ingredients [to serve 4]

  1. Beetroot- 1 grated
  2. Potato -2 boiled
  3. Bread – 3
  4. Salt – To taste
  5. Peanut(roasted) – 1 tbsp.
  6. Garlic- 3 chopped .
  7. Green chillis – 3 chopped.
  8. Green peas(frozen) – 3 tbsp
  9. Coriander leaves-chopped

Preparation Method

  1. Mix all the above ingredients and make small balls
  2. Heat oil in a pan and fry them in low flame till it turns golden brown
  3. Serve hot

Prawn Salad

Simple prawn based salad that your husband can make while you watch your favorite show on the television….A good evening snack for quick bite

Ingredients [to serve 2]

  1. Prawns (Small Ones)- 200 gms. (Peeled off…prefer the ones that are ready to cook)
  2. Onion-1 small(cut into large pieces)
  3. Green Bellpepper- 1/3 portion, cut into large pieces
  4. Red Bellpepper- 1/3 portion, cut into large pieces
  5. Yellow Bellpepper- 1/3 portion, cut into large pieces
  6. Broccoli- 2 to 3 small pieces
  7. Babycorn- 4 to 5 small pieces
  8. Oil -1 tbsp (preferably olive oil0

Preparation Method

  1. Clean the prawns (remove the shell and tails…just keep the body meat)
  2. Heat oil in a pan (preferably olive oil)
  3. First fry the prawns until they turn brown (do not overcook)
  4. Take them out in a bowl
  5. Add the green vegetables to the prawns and mix them well.
  6. Add salt and pepper to taste

Rice Pudding

Traditional indian desert popularly known as “Kheer”…

Ingredients [to serve 4]

  1. Milk – 1/2 Gals.
  2. Almonds – 2 tbsp.
  3. Kesar(Saffron Threads) – 1 pinch
  4. Sugar – 6 tbsp. ( Or as per taste)
  5. Rice – 4-6 tbsp.

Preparation Method

  1. Boil rice and milk in a big pan until the rice is completely done and the milk becomes thick.Boil on medium heat.
  2. During the boiling process, stir frequently.
  3. Add sugar and almonds. Stir until the sugar dissolves.
  4. Add kesar(Saffron Threads) and serve hot.

Plain and simple dessert…My daughter loves it..

Ingredients [to serve 4]

  1. Milk – 500 ml
  2. Sugar – 50 g
  3. Custard powder – 2 tbsp
  4. Mixed fruits (grapes,banana,apple,mango)- 1 cup
  5. Red cherries – 4

Preparation Method

  1. Take 1/4 cup of milk and add 2 tbsp. of custard powder.
  2. Boil 500 ml. milk and add sugar .
  3. Remove from heat, add the paste and cook again for 2 to 3 mins.Stir it continously
  4. Let it cool and then add all the mixed fruits including red cheeries.
  5. Custard is ready to serve (Serve Chilled..recommended)
