Vegetarian Biryani

Biryani, though a traditionally non-veg dish, the vegetarian alternative “Veg Biryani” has caught all vegetarians by storm…Now even they can enjoy this hyderabadi dish.

Ingredients [ to serve 4 ]

  1. Basmati rice – 2 cup
  2. Mixed vegetable – 1 cup (cauliflower,Carrot,Beans,Peas,Capsicum)
  3. Onion – 1
  4. Salt – To taste
  5. Cashews – few.
  6. Green chillies – 2.
  7. Biryani masala – 2 tbsp
  8. Cloves – 4
  9. Mustard seeds – 1/2 tbsp

Preparation Method

  1. Cook rice in a pan with salt and water.
  2. Cut all the vegetables into small pieces and fry in oil
  3. Heat oil in a pan add mustard seeds,green chilli and cloves
  4. Now add onion and fry till golden brown then add cashews and fry for 2 minutes
  5. Now add all the fried vegetables and biryani masala and cook for few minutes
  6. Lastly add the cooked rice and mix well.
  7. Serve with raita  ( a dish which has curd, some water, salt and bits of onions and cucumber)

Instant Chili Pickle

Make a really hot green chili pickle in minutes…No need to wait for days…like our grandma’s…

Ingredients [to server 5]

  1. Green Chillies – 5 big
  2. Amchur Powder – 1 tbsp. (Dried mango powder, the sour ones)
  3. Garlic Cloves – 4 big
  4. Salt – To taste
  5. Mustard Oil – 2 tbsp.
  6. Lemon Juice – 2 tbsp.

Preparation Method

  1. Grate garlic cloves and add amchur powder, salt and 1/2 tbsp. mustard oil.Mix well.
  2. Slit the green chillis vertically, and remove all seeds from inside. Do not break them into two pieces.
  3. Take the spices prepared in step 1 and fill a little in each chilli.
  4. Take rest of the mustard oil and put it in a pan.
  5. Fry the chillis filled with the spices till the chillies turn brown.
  6. Sprinkle lemon juice to reduce the heat.
  7.  You are ready to serve .

You can keep them in the refrigerator for a few days. With each passing day, the heat will reduce.

Alu Bhujia a.k.a Indian Potato Fries

Quick fire desi french fries!!! (Indian version of French Fries)

Ingredients [to serve 2]

  1. Potato – 2 big
  2. Poppy Seeds(Posto) – 2 tbsp.
  3. Corn Starch – 1 big
  4. Salt – To taste
  5. Black Salt – 1/2 tbsp.
  6. Pepper Powder – 1/4 tbsp.

Preparation Method

  1. Cut the potatoes like french fries.
  2. Add poppy seeds, corn starch, salt and mix them well
  3. Deep fry until the potatoes turn little brownish
  4. Add black salt and pepper powder.
  5. You are ready to serve your Alu Bhujia

Vegetarian Cutlet

Perfect for evening tea…Make is fast , make it good

Ingredients [to serve 4]

  1. Beetroot- 1 grated
  2. Potato -2 boiled
  3. Bread – 3
  4. Salt – To taste
  5. Peanut(roasted) – 1 tbsp.
  6. Garlic- 3 chopped .
  7. Green chillis – 3 chopped.
  8. Green peas(frozen) – 3 tbsp
  9. Coriander leaves-chopped

Preparation Method

  1. Mix all the above ingredients and make small balls
  2. Heat oil in a pan and fry them in low flame till it turns golden brown
  3. Serve hot

Rice Pudding

Traditional indian desert popularly known as “Kheer”…

Ingredients [to serve 4]

  1. Milk – 1/2 Gals.
  2. Almonds – 2 tbsp.
  3. Kesar(Saffron Threads) – 1 pinch
  4. Sugar – 6 tbsp. ( Or as per taste)
  5. Rice – 4-6 tbsp.

Preparation Method

  1. Boil rice and milk in a big pan until the rice is completely done and the milk becomes thick.Boil on medium heat.
  2. During the boiling process, stir frequently.
  3. Add sugar and almonds. Stir until the sugar dissolves.
  4. Add kesar(Saffron Threads) and serve hot.

Custard

Plain and simple dessert…My daughter loves it..

Ingredients [to serve 4]

  1. Milk – 500 ml
  2. Sugar – 50 g
  3. Custard powder – 2 tbsp
  4. Mixed fruits (grapes,banana,apple,mango)- 1 cup
  5. Red cherries – 4

Preparation Method

  1. Take 1/4 cup of milk and add 2 tbsp. of custard powder.
  2. Boil 500 ml. milk and add sugar .
  3. Remove from heat, add the paste and cook again for 2 to 3 mins.Stir it continously
  4. Let it cool and then add all the mixed fruits including red cheeries.
  5. Custard is ready to serve (Serve Chilled..recommended)
